smoked onions and brats once, and this

Recipe: Bratwurst Large Onions Olive Oil Sandwich Rolls Beer
In a black iron
pan over hot coals, quickly sear the brats in oil.
Cover with sliced onions, and then add beer to cover the bottom
of pan to create steam as shown. Add some wood chunks
to the hot coals, cover grill and then slow cook for at
least 30 minutes in order for the onions to take on that sweet
smoked flavor. Just before serving, grill the bratwurst and
then serve on a fresh grinder/sub bread roll
with your favorite condiments.
