Slice up the par-cooked potatoes
and onions as shown. Place them on a shallow pan with the
mushrooms, butter slices, and then coat with oil and soy sauce.
Apply pork rub (or just plain salt and pepper) to the chops and
then cover with bread crumbs. Quickly sear chops on both sides
in oiled black iron pan. Remove the seared pork chops and
place in the shallow pan with the potatoes, onions and
mushrooms. Now place the pan opposite the coals in a
325-350f covered grill. In about 20-30 minutes, or when the
temperature of the chops reach about 145f., remove and
serve.
